Sodium bicarbonate, also known as baking soda, is used as a baking powder in all your pastries.

During cooking, the bicarbonate reacts with the other acidic components and allows to aerate the product to be cooked.

The ingredients that favor this reaction are tartaric acid, lemon juice, yoghurt, beaten milk, cocoa and honey.

Sodium bicarbonate can replace baking powder, provided the recipe contains enough acidic ingredients.
